Josh Smith pivoted from New York’s theatre and movie scene to hydroponic farming during the Covid pandemic. He soon decided to turn his healthy lifestyle choice into a career. We talk to him about his “Neon Greens” restaurant and the products he’s also putting into other eateries and stores. Smith is part of a growing trend in the region. A national not-for-profit says the St. Louis region is poised to become the global center for innovation in soilless agriculture.
